Beat softened butter and powdered sugar for 1-2 minutes until creamy. Mix in egg and vanilla until smooth.

Mix in flour, salt and baking powder just until combined. Form into a ball and wrap in plastic.

Refrigerate dough for at least 30 minutes.

Roll dough to 3mm thickness on floured surface. Freeze 10 minutes, then cut shapes.

Place cut cookies on lined baking sheet. Freeze 15-30 minutes until solid.

Bake frozen cookies at 170°C (340°F) for 8-10 minutes until edges are light golden. Centers should still be soft.
