Vanilla Sugar Cut Cookies (Print Version)

# Ingredients:

01 - 100g (1/2 cup) softened unsalted butter.
02 - 80g (2/3 cup) powdered sugar.
03 - 1 egg, room temperature.
04 - 1/2 teaspoon vanilla extract.
05 - 200g (1 1/2 cups) all-purpose flour.
06 - 1 pinch salt.
07 - 1/2 teaspoon baking powder (optional).

# Instructions:

01 - Beat softened butter and powdered sugar for 1-2 minutes until creamy. Mix in egg and vanilla until smooth.
02 - Mix in flour, salt and baking powder just until combined. Form into a ball and wrap in plastic.
03 - Refrigerate dough for at least 30 minutes.
04 - Roll dough to 3mm thickness on floured surface. Freeze 10 minutes, then cut shapes.
05 - Place cut cookies on lined baking sheet. Freeze 15-30 minutes until solid.
06 - Bake frozen cookies at 170°C (340°F) for 8-10 minutes until edges are light golden. Centers should still be soft.

# Notes:

01 - Cool completely before decorating with icing or chocolate.
02 - Keeps 1 week in airtight container.
03 - Can be frozen up to 3 months.
