Pork Stew (Print Version)

# Ingredients:

01 - 1.5 pounds pork tenderloin, cubed.
02 - 1 teaspoon kosher salt.
03 - 1/2 teaspoon black pepper.
04 - 2 tablespoons olive oil.
05 - 1 large onion, chopped.
06 - 3 cloves garlic, minced.
07 - 2 tablespoons flour.
08 - 4 cups chicken or vegetable broth.
09 - 14.5 ounces diced tomatoes with juice.
10 - 4 medium russet potatoes, cubed.
11 - 3 large carrots, sliced.
12 - 1 teaspoon dried thyme.
13 - 1 teaspoon dried rosemary.
14 - 2 tablespoons Worcestershire sauce.
15 - 1 bay leaf.
16 - 2 tablespoons fresh parsley, chopped.

# Instructions:

01 - Heat oil in large pot over medium-high.
02 - Season and brown pork in batches.
03 - Sauté onion and garlic.
04 - Stir in flour, cook 1 minute.
05 - Add broth, scrape bottom.
06 - Return pork to pot.
07 - Add remaining ingredients.
08 - Bring to boil, reduce heat.
09 - Simmer covered 1.5-2 hours.
10 - Season to taste.
11 - Remove bay leaf.
12 - Garnish with parsley.
