Pizza Soup (Print Version)

# Ingredients:

→ Meats

01 - 1 bag (6 ounces) sliced pepperoni, chopped small, plus extra for topping
02 - 1 pound ground mild Italian sausage

→ Veggies & Aromatics

03 - 1 medium yellow onion, chopped into small cubes (around 1 cup)
04 - 1 green bell pepper, chopped and deseeded (about 1 cup)
05 - 1 tablespoon of fresh minced garlic

→ Liquids & Bases

06 - 1 can (14 ounces) of pizza-flavored sauce
07 - 4 cups (32 ounces) of chicken stock
08 - 1 large (28 ounces) can of crushed tomatoes

→ Flavors & Extra Toppings

09 - 1 cup (about 100g) of finely grated parmesan cheese, plus more for serving
10 - Fresh basil leaves for decoration
11 - 2 teaspoons of dried Italian herb mix
12 - A pinch (¼ teaspoon) of red chili flakes

# Instructions:

01 - In a big pot or Dutch oven, warm over medium heat and toss in the sausage, along with the onions and green bell pepper. Stir every now and then, breaking apart the meat, until the sausage is browned (takes about 8-10 minutes). Add garlic in the last minute, stirring, then drain any fat.
02 - Pour in the chicken stock gently, stirring to loosen any stuck bits at the bottom of the pot.
03 - Stir in the crushed tomatoes, pizza sauce, pepperoni, Italian herbs, and chili flakes. Let it come to a gentle simmer (around 3-5 minutes), stirring occasionally. Add parmesan cheese and mix until it melts smoothly.
04 - Top with basil, extra parmesan, and some of the leftover pepperoni. Enjoy warm.
