Reese's Cookie Bars (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 1 cup (2 sticks) salted butter, melted and slightly cooled
02 - 1 cup creamy peanut butter
03 - 2 large eggs
04 - 2 teaspoons vanilla extract

→ Dry Ingredients

05 - 1 cup granulated sugar
06 - 1 cup light brown sugar, packed
07 - 2½ cups all-purpose flour
08 - 1 teaspoon baking soda
09 - 1/4 teaspoon kosher or sea salt

→ Mix-Ins

10 - 2 cups miniature Reese's peanut butter cups, halved (save 1/2 cup for topping)
11 - 1/2 cup mini semi-sweet chocolate chips (save 2 tablespoons for topping)

# Instructions:

01 - Heat your oven to 350°F. Line a 9x13 baking pan with parchment paper, leaving some hanging over the sides for easy lifting later. If you don't have parchment, spray the pan well with cooking spray.
02 - In a large bowl with an electric mixer (or stand mixer with paddle), beat together the melted butter, both sugars, peanut butter, eggs, and vanilla until everything's well combined and smooth.
03 - Add flour, baking soda, and salt to your bowl. Mix on low speed just until combined and no dry flour spots remain. Don't overmix!
04 - Gently stir in most of the halved Reese's cups and chocolate chips (remember to save some for the top). Mix just until they're evenly spread through the dough.
05 - Spread the dough evenly in your prepared pan. Smooth the top with a spatula or clean hands. Sprinkle those reserved Reese's pieces and chocolate chips over the top, pressing them in slightly.
06 - Bake for 25-30 minutes until the edges are golden brown and a toothpick in the center comes out with just a few moist crumbs. Let cool completely in the pan before cutting into squares.

# Notes:

01 - To melt butter perfectly, microwave for 45-50 seconds - you want half melted, half soft, then stir until completely smooth
02 - Using unsalted butter? Increase salt to 1/2 teaspoon
03 - Feel free to swap in different Reese's varieties - just chop them small first
