Mint Oreo Cheesecake Bars (Print Version)

# Ingredients:

01 - 40 mint Oreo cookies, divided.
02 - 4 tablespoons butter, melted.
03 - 24 ounces cream cheese (3 blocks), room temperature.
04 - 3/4 cup granulated sugar.
05 - 3/4 cup sour cream, room temperature.
06 - 1/2 teaspoon vanilla extract.
07 - 1 teaspoon mint extract.
08 - 1/2 teaspoon salt.
09 - 3 large eggs, room temperature.
10 - Green food coloring, optional.

# Instructions:

01 - Heat oven to 325°F. Line 13x9 pan with parchment, leaving overhang.
02 - Process 26 Oreos until fine, mix with butter. Press in pan, bake 10 minutes.
03 - Beat cream cheese until smooth. Add sugar, sour cream, extracts, and salt.
04 - Beat in eggs one at a time. Add food coloring if desired.
05 - Fold in half of chopped remaining Oreos. Pour over crust, top with rest.
06 - Bake 40 minutes. Cool 1 hour, then chill 3 hours. Cut into bars.

02 - Chill completely before cutting.
03 - Center should be slightly wobbly when done.
