Keto Coconut Fudge Truffles (Print Version)

# Ingredients:

01 - 1/2 cup heavy cream or coconut cream, cold.
02 - 4 tablespoons melted butter or coconut oil.
03 - 3 scoops plain whey protein powder.
04 - 1/2 cup keto powdered sweetener.
05 - 1/2 cup fine coconut flour.
06 - 3/4 cup shredded unsweetened coconut, plus extra for coating.
07 - 1 teaspoon pure vanilla extract (optional).

# Instructions:

01 - Put cream and melted butter in food processor or bowl. Mix until smooth.
02 - Pour in protein powder, sweetener, coconut flour and shredded coconut. Add vanilla if using. Blend until you get a firm dough.
03 - Split mixture into 16 equal pieces. Roll each piece into a ball with your hands.
04 - Roll each ball in extra shredded coconut until fully covered.
05 - Put truffles in fridge for at least 30 minutes to set before eating.

# Notes:

01 - Use powdered sweetener for smooth texture.
02 - Can use vanilla protein powder instead of plain.
03 - Chill dough if too soft to roll.
