Banana Breakfast Cookies (Print Version)

# Ingredients:

01 - 1½ cups oats.
02 - ½ cup peanut butter.
03 - 2 overripe bananas, mashed.
04 - ¼ teaspoon salt.
05 - ½ cup chocolate chips, plus 2 tablespoons for topping.
06 - ¼ teaspoon cinnamon (optional).
07 - 1 teaspoon vanilla (optional).

# Instructions:

01 - Heat oven to 350°F. Line a baking sheet with parchment paper.
02 - Combine oats, mashed bananas, peanut butter, cinnamon, and salt in a bowl. Stir in ½ cup chocolate chips.
03 - Shape dough into 7 cookies. Place on lined pan and press to ½ inch thickness. Top with extra chocolate chips if desired.
04 - Bake for 8-10 minutes. Let cool before serving.

01 - Can use different mix-ins like white chocolate, dried fruit, or raisins.
02 - Cookie size can be adjusted as needed.
