In a large mixing bowl, combine eggs, milk, sour cream, salt, and pepper. Whisk thoroughly, then stir in mozzarella cheese.

Preheat oven to 350˚F. Pour the egg mixture into a buttered 9x13-inch casserole dish and bake for 18-20 minutes or until fluffy and firm. Allow to cool for 10-15 minutes, then cut into 6 equal squares or 6 circles using a large round cookie cutter.

Set oven to broil on high heat. Halve the English muffins and butter the cut sides. Arrange cut side up on a rimmed baking sheet and broil for 2-4 minutes until golden and crisp. Allow to cool slightly.

Layer each sandwich with the bottom muffin, followed by an egg square, a slice of cheese, 2 slices of ham, and the top muffin.

Wrap each sandwich tightly in plastic wrap or aluminum foil for camping. Refrigerate for up to 1 week or freeze for up to 2 months in a freezer-safe bag.

From frozen: Remove plastic wrap, microwave on a paper towel for 3 minutes (turn halfway) until warmed through. From thawed: Thaw overnight in the refrigerator, microwave for 1 minute until hot. For camping: Thaw sandwich, keep wrapped in aluminum foil, and heat over a campfire or grill for 3-5 minutes.
