# Ingredients:

→ Pasta

01 - 12 lasagna noodles, cooked according to package instructions

→ Meat Sauce

02 - 455 grams ground beef, 85% lean
03 - 680 grams marinara sauce
04 - 80 grams diced onion
05 - 3 garlic cloves, minced
06 - 1 teaspoon sea salt, or to taste
07 - 1/2 teaspoon ground black pepper, or to taste
08 - 1/2 teaspoon dried oregano

→ Cheese Mixture

09 - 425 grams ricotta cheese
10 - 1 large egg
11 - 25 grams parmesan cheese, shredded
12 - 340 grams mozzarella cheese, shredded, divided
13 - 15 grams parsley, finely chopped, plus extra for garnish

# Instructions:

01 - Preheat oven to 190°C. Cook lasagna noodles in a large pot of salted boiling water following package instructions. Drain and transfer them into cold water to prevent sticking.
02 - Heat a deep pan over medium-high. Add ground beef and cook, breaking it up with a spatula, until no longer pink, about 2 minutes. Add diced onion and cook until softened for 3 minutes. Stir in minced garlic, sea salt, black pepper and oregano, sauté for 1 minute. Add marinara sauce, bring to a simmer, then remove from heat.
03 - In a large bowl, combine ricotta cheese, egg, shredded parmesan, 170 grams mozzarella and chopped parsley. Mix until evenly incorporated.
04 - Lay noodles in a single layer on a baking sheet. Spread about 60 ml of cheese mixture along each noodle. Spoon a generous tablespoon of meat sauce down the center of every noodle. Roll each noodle tightly and arrange in a baking dish with 120 ml of meat sauce spread on bottom.
05 - Spread remaining meat sauce evenly over roll-ups. Sprinkle with the rest of the mozzarella. Cover with foil, ensuring foil does not touch the cheese. Bake for 40 minutes.
06 - Remove foil and broil for 2-3 minutes, or until cheese turns golden. Garnish with additional parsley and serve hot.

# Notes:

01 - For easier assembly, arrange noodles on a baking sheet in a single layer to prevent sticking.
02 - Lasagna roll ups can be prepared ahead, refrigerated, or frozen before baking.
