Sprinkle gelatin over water in bowl and let sit 5 minutes.

Simmer cream, milk, sugar, vanilla and salt until sugar dissolves.

Remove from heat. Add bloomed gelatin and whisk until smooth.

Pour into serving jars and refrigerate at least 6 hours.

Top with fruit and mint if desired. Serve chilled.
