Turkey Veggie Soup (Print Version)

# Ingredients:

01 - 2 tablespoons canola oil.
02 - 2 large carrots, diced.
03 - 2 celery ribs, chopped.
04 - 1 medium onion, diced.
05 - 3 cloves garlic, minced.
06 - 1 teaspoon salt.
07 - 1 teaspoon dried parsley.
08 - 1 teaspoon dried thyme.
09 - 1/4 teaspoon black pepper.
10 - 1/4 teaspoon paprika.
11 - 3 cups turkey stock.
12 - 1 1/2 pounds Yukon gold potatoes.
13 - 2 cups cooked turkey.
14 - 1/4 cup butter.
15 - 3 tablespoons flour.
16 - 1 1/2 cups milk.

# Instructions:

01 - Sauté carrots, celery and onion until softened.
02 - Stir in garlic and spices, cook 1 minute.
03 - Add stock and potatoes, simmer until tender.
04 - Mix melted butter with flour, whisk in milk and microwave until thick.
05 - Add turkey and thickened milk to soup, heat through.

# Notes:

01 - Can make up to 4 days ahead.
02 - Don't freeze due to dairy.
03 - Can add extra vegetables.
