Texas Chili Con Carne (Print Version)

# Ingredients:

01 - 4 New Mexico chilies, stemmed and seeded.
02 - 3 Ancho chilies, stemmed and seeded.
03 - 3 cups low-sodium chicken broth.
04 - 4 pounds boneless beef chuck, 1-inch cubes.
05 - 2 tablespoons olive oil.
06 - Salt and black pepper.
07 - 1 extra large yellow onion, chopped.
08 - 1 red bell pepper, chopped.
09 - 2-6 jalapeños, diced (optional).
10 - 4 garlic cloves, minced.
11 - 1 tablespoon ground cumin.
12 - 2 teaspoons paprika.
13 - 1 1/2 teaspoons ground coriander.
14 - 1/2 teaspoon allspice.
15 - 2 teaspoons Mexican oregano.
16 - 2 teaspoons unsweetened cocoa powder.
17 - 2 cups tomato puree.

# Instructions:

01 - Toast chilies in pot over medium heat, 2 minutes per side.
02 - Add broth, bring to boil, cover and steep 5-10 minutes.
03 - Blend chili mixture until smooth.
04 - Heat oil, sear beef in batches until browned.
05 - Sauté onion, pepper, jalapeños 4 minutes.
06 - Add garlic and spices, cook 1 minute.
07 - Add tomato puree, chili mixture, oregano, cocoa.
08 - Add beef, bring to simmer.
09 - Cook on low 2-3 hours until beef tender.
10 - Add broth or puree to adjust consistency.
11 - Season with salt and pepper.
12 - Serve with optional toppings.

# Notes:

01 - Traditional Texas chili has no beans.
02 - Can use chipotle chilies for smoky flavor.
03 - Add bacon for extra meatiness.
