Sweet Fire Meatballs (Print Version)

# Ingredients:

01 - 24 oz bag frozen chicken meatballs.
02 - 1 tablespoon vegetable, canola, or olive oil.
03 - 1 red bell pepper, seeded and diced.
04 - 8 oz can crushed pineapple, drained.
05 - ½ cup hot sauce.
06 - 1⅓ cups brown sugar, packed.
07 - 2 tablespoons apple cider vinegar.
08 - ¼ teaspoon salt.

# Instructions:

01 - Heat oven to 350°F. Spread frozen meatballs in one layer on a baking tray.
02 - Bake meatballs for 15-25 minutes until hot throughout.
03 - Heat oil in a large saucepan over medium heat.
04 - Add diced red bell pepper and cook 3-5 minutes until starting to soften.
05 - Stir in drained pineapple, hot sauce, brown sugar, vinegar, and salt.
06 - Let sauce simmer until it thickens.
07 - Toss cooked meatballs with the sauce.
08 - Serve hot over rice.

# Notes:

01 - For less spicy version, replace half the hot sauce with water or pineapple juice.
02 - Can be made ahead and kept warm in a slow cooker.
03 - Makes a great party appetizer.
