Stuffed Potato Cakes (Print Version)

# Ingredients:

01 - 4 large potatoes, peeled and grated.
02 - 1 pound ground beef.
03 - 1 cup shredded cheddar cheese.
04 - 1 onion, finely chopped.
05 - 2 cloves garlic, minced.
06 - 1 teaspoon paprika.
07 - Salt and pepper to taste.
08 - Olive oil for frying.

# Instructions:

01 - Peel and grate potatoes. Place in bowl, add salt, and squeeze out extra moisture.
02 - Heat olive oil in pan over medium heat.
03 - Form potato mixture into patties and fry until golden brown on both sides. Set aside.
04 - In same pan, cook ground beef until browned.
05 - Add onions, garlic, paprika, salt, and pepper to beef. Cook until onions soften.
06 - Take one potato patty, top with beef mixture and cheese.
07 - Cover with second potato patty, seal edges well.
08 - Return stuffed cakes to pan, fry until crispy and golden on both sides.
09 - Serve hot, topped with sour cream if desired.

01 - These potato cakes are perfect for using leftover potatoes. Make sure to squeeze out as much moisture as possible from the grated potatoes for extra crispiness.
