Pink Strawberry Cake Cookies (Print Version)

# Ingredients:

→ Main Ingredients

01 - 15.25 oz strawberry cake mix
02 - ½ teaspoon baking powder
03 - 2 eggs
04 - ½ teaspoon vanilla extract
05 - ⅓ cup melted butter
06 - 1½ cup white chocolate chips, plus more to garnish

# Instructions:

01 - Start by preheating your oven to 350 degrees F. While it's warming up, line a cookie sheet with parchment paper and set it aside.
02 - In a medium bowl, whisk together your strawberry cake mix and baking powder until they're well combined.
03 - Add in your eggs and vanilla extract, mixing until everything starts coming together. Pour in the melted butter and mix until you have a soft, sticky dough.
04 - Gently fold in the white chocolate chips, stirring by hand until they're evenly distributed throughout your pretty pink dough.
05 - Using a medium cookie scoop (about 1½ tablespoons), scoop out balls of dough. Roll each one between your palms to form nice round balls, then place them on your prepared cookie sheet. Bake for 8-10 minutes until just set.
06 - Right after taking them out of the oven, press a few extra white chocolate chips into the tops of the warm cookies for that picture-perfect look. Let them rest on the cookie sheet for a couple minutes, then transfer to a cooling rack to finish cooling completely.

# Notes:

01 - These cookies will be soft and pillowy, not crisp
02 - The dough might be sticky, so rolling with slightly damp hands helps
03 - Store in an airtight container for up to 5 days
