Start by preheating your oven to 350 degrees F. While it's warming up, line a cookie sheet with parchment paper and set it aside.

In a medium bowl, whisk together your strawberry cake mix and baking powder until they're well combined.

Add in your eggs and vanilla extract, mixing until everything starts coming together. Pour in the melted butter and mix until you have a soft, sticky dough.

Gently fold in the white chocolate chips, stirring by hand until they're evenly distributed throughout your pretty pink dough.

Using a medium cookie scoop (about 1½ tablespoons), scoop out balls of dough. Roll each one between your palms to form nice round balls, then place them on your prepared cookie sheet. Bake for 8-10 minutes until just set.

Right after taking them out of the oven, press a few extra white chocolate chips into the tops of the warm cookies for that picture-perfect look. Let them rest on the cookie sheet for a couple minutes, then transfer to a cooling rack to finish cooling completely.
