Southern Smothered Chicken (Print Version)

# Ingredients:

01 - 2 pounds chicken thighs and/or drumsticks.
02 - 1 1/3 cups all-purpose flour.
03 - 1 tablespoon onion powder.
04 - 2 teaspoons garlic powder.
05 - 2 teaspoons salt, divided.
06 - 2 teaspoons ground black pepper, divided.
07 - 1 teaspoon poultry seasoning.
08 - 1 teaspoon paprika.
09 - 2/3 cup vegetable oil.
10 - 1 large onion, diced.
11 - 1 teaspoon chicken bouillon.
12 - 2 cups chicken broth.
13 - 1 cup whole milk.
14 - Fresh parsley for garnish.

# Instructions:

01 - Mix flour with onion powder, garlic powder, salt, pepper, poultry seasoning, and paprika. Reserve 3 tablespoons for gravy.
02 - Dredge each piece of chicken in the seasoned flour mixture until well coated.
03 - Heat oil in large skillet over medium heat. Fry chicken until browned on all sides. Remove to wire rack.
04 - Cook onions in same oil until golden. Whisk in reserved flour and seasonings. Add broth and milk, stirring until smooth.
05 - Return chicken to pan, cover with gravy. Cook covered 30 minutes until chicken reaches 165°F, turning occasionally.

# Notes:

01 - Best made with skinless chicken pieces.
02 - Can substitute stock or bouillon/water for broth.
03 - Keeps in fridge 3 days or freezer 3 months.
