# Ingredients:

01 - 2 cups (283g) all-purpose flour.
02 - 1/2 teaspoon baking powder.
03 - 1/2 teaspoon baking soda.
04 - 1/4 teaspoon salt.
05 - 1 1/4 cups (250g) granulated sugar.
06 - 12 tablespoons (170g) unsalted butter, room temperature.
07 - 1 1/2 tablespoons fresh lemon zest.
08 - 1 large egg.
09 - 1 large egg yolk.
10 - 1 1/2 tablespoons fresh lemon juice.
11 - 1 teaspoon vanilla extract.
12 - 1 1/4 cups (150g) powdered sugar.
13 - 2 1/2 tablespoons fresh lemon juice.

# Instructions:

01 - Whisk flour, baking powder, baking soda, and salt together.
02 - Beat sugar, butter, and lemon zest until fluffy.
03 - Mix in egg and yolk.
04 - Add lemon juice and vanilla extract.
05 - Mix in flour mixture until combined.
06 - Chill dough for 45-60 minutes.
07 - Heat oven to 350°F (175°C).
08 - Roll 1 1/2 tablespoon-sized dough balls and place 12 on each baking sheet.
09 - Bake for 9 minutes.
10 - Cool cookies for 5 minutes on the pan before transferring to a wire rack.
11 - Mix powdered sugar and lemon juice for the icing.
12 - Spread or pipe icing onto cooled cookies and let set before storing.
