Heat oven to 400°F. Line baking sheet with parchment.

Mix sausage, cheese, crumbs, 1 egg and thyme. Beat other egg for wash.

Cut pastry sheets in half. Shape meat into ropes and place on pastry strips.

Add mustard and egg wash to pastry edges. Roll up with seam down.

Cut slits on top, slice into pieces. Add egg wash and seasoning.

Cook 18-20 minutes until golden. Cool briefly then add honey and thyme.
