Roasted Garlic Cauliflower Soup (Print Version)

# Ingredients:

01 - 1 head cauliflower.
02 - 3 spoons olive oil.
03 - 1 head garlic.
04 - 1 yellow onion.
05 - 4 cups vegetable broth.
06 - ½ teaspoon salt.
07 - Black pepper.
08 - 1 cup sharp cheddar.
09 - Green onions.

# Instructions:

01 - Heat oven to 400°F. Line baking sheet with parchment.
02 - Toss cauliflower with oil and seasonings. Wrap oiled garlic in foil.
03 - Cook cauliflower and garlic 30-35 minutes, flipping once, until golden.
04 - Sauté diced onion 5-8 minutes until soft.
05 - Blend onions, roasted vegetables, broth and seasonings until smooth.
06 - Return to pot, add cheese and simmer 10-15 minutes. Garnish and serve.

# Notes:

01 - Can use milk for richness.
02 - Adjust broth for thickness.
