Heat oven to 400°F. Line baking sheet with parchment.

Toss cauliflower with oil and seasonings. Wrap oiled garlic in foil.

Cook cauliflower and garlic 30-35 minutes, flipping once, until golden.

Sauté diced onion 5-8 minutes until soft.

Blend onions, roasted vegetables, broth and seasonings until smooth.

Return to pot, add cheese and simmer 10-15 minutes. Garnish and serve.
