Heat oven to 350°F. Line baking sheet with foil.

Place carrots on sheet. Add sugar, butter, salt, pepper and cinnamon.

Bake 50-60 minutes until tender, turning several times.

Melt butter, add syrup, sugar and pecans. Cook 2 minutes until thick. Add salt.

Top carrots with pecans, goat cheese and thyme.
