Roasted Carrots with Candied Pecan and Goat Cheese (Print Version)

# Ingredients:

01 - 2 pounds carrots.
02 - ½ cup brown sugar.
03 - 4 spoons butter.
04 - 1 teaspoon salt.
05 - ½ teaspoon pepper.
06 - ½ teaspoon cinnamon.
07 - 4 oz goat cheese.
08 - 1 spoon fresh thyme.
09 - 2 spoons butter for pecans.
10 - 3 spoons maple syrup.
11 - 1 spoon brown sugar.
12 - 1 cup chopped pecans.
13 - ¼ teaspoon sea salt.

# Instructions:

01 - Heat oven to 350°F. Line baking sheet with foil.
02 - Place carrots on sheet. Add sugar, butter, salt, pepper and cinnamon.
03 - Bake 50-60 minutes until tender, turning several times.
04 - Melt butter, add syrup, sugar and pecans. Cook 2 minutes until thick. Add salt.
05 - Top carrots with pecans, goat cheese and thyme.

01 - Turn carrots while roasting.
02 - Add toppings just before serving.
