# Ingredients:

01 - 1 cup grated zucchini, squeezed dry
02 - 1 cup pumpkin purée
03 - 2 eggs
04 - 1/2 cup vegetable or coconut oil
05 - 3/4 cup brown sugar
06 - 1/4 cup maple syrup or honey
07 - 1 teaspoon vanilla extract

→ Dry Ingredients

08 - 1 3/4 cups all-purpose flour
09 - 1 teaspoon baking soda
10 - 1/2 teaspoon baking powder
11 - 1/2 teaspoon salt
12 - 1 1/2 teaspoons cinnamon
13 - 1/2 teaspoon nutmeg
14 - 1/4 teaspoon ground ginger

→ Mix-ins (Optional)

15 - 1/2 cup chopped walnuts or pecans
16 - 1/2 cup chocolate chips

# Instructions:

01 - Heat oven to 350°F. Grease or line 9x5 loaf pan.
02 - Whisk eggs, oil, sugars, vanilla, pumpkin, and zucchini until smooth.
03 - Mix flour, leaveners, salt, and spices in separate bowl.
04 - Gradually mix dry into wet ingredients. Fold in optional nuts and chips. Bake 50-60 minutes.
