Pumpkin Crinkle Cookies (Print Version)

# Ingredients:

01 - 2 cups all-purpose flour.
02 - 1 tablespoon pumpkin pie spice.
03 - 2 teaspoons baking powder.
04 - 1 teaspoon baking soda.
05 - 1/2 teaspoon salt.
06 - 1/2 cup oil (canola/vegetable).
07 - 1/2 cup brown sugar, packed.
08 - 1/2 cup granulated sugar.
09 - 1 large egg.
10 - 1 cup pumpkin puree.
11 - 1 teaspoon vanilla extract.
12 - 1/2 cup granulated sugar (for rolling).
13 - 1 cup powdered sugar (for rolling).

# Instructions:

01 - Heat oven to 350°F. Line baking sheets with parchment.
02 - Whisk flour, spice, baking powder, baking soda, and salt.
03 - Mix oil, sugars, egg, pumpkin, and vanilla.
04 - Fold dry ingredients into wet until combined.
05 - Place rolling sugars in separate bowls.
06 - Scoop dough into granulated sugar.
07 - Roll to coat, shake off excess.
08 - Roll in hands to smooth.
09 - Coat in powdered sugar (don't shake off).
10 - Place on sheets 2 inches apart.
11 - Bake immediately 9-10 minutes until cracked.
12 - Cool slightly before moving to wire rack.

01 - Dough will be soft and sticky. Work quickly once sugared.
