Grab everything you need and give those potatoes a good peeling before chopping them into hearty chunks.

Dump the sauerkraut into your slow cooker first, then add those potato chunks. Sprinkle the caraway seeds over everything, toss in that bay leaf, and add a bit of pepper. Pour the water over it all.

Place your chunky pieces of Polish sausage right on top of everything else. They'll flavor everything as they cook!

Cover and let it do its thing - 4 hours on high or 6 hours on low. You'll know it's ready when those potatoes are fork-tender and everything smells amazing.

Give it a taste and see if you need more seasoning. Sometimes I like to add a sprinkle of paprika or a bit more pepper at this point.
