# Ingredients:

01 - 1 2/3 cups all-purpose flour.
02 - 3.4 oz instant pistachio pudding mix.
03 - 1 teaspoon baking soda.
04 - 1/2 teaspoon salt.
05 - 3/4 cup unsalted butter, room temperature.
06 - 3/4 cup granulated sugar.
07 - 1/4 cup light brown sugar.
08 - 1 large egg.
09 - 1 teaspoon vanilla extract.
10 - 1 drop green food coloring (optional).
11 - 1 cup white chocolate chips.
12 - 1/2 cup chopped pistachios.

# Instructions:

01 - Preheat oven to 350°F and line baking sheets with parchment paper.
02 - Whisk flour, pudding mix, baking soda, and salt.
03 - Beat butter and sugars until light and fluffy.
04 - Mix in egg, vanilla, and optional food coloring.
05 - Add dry ingredients to wet ingredients until just combined.
06 - Fold in white chocolate chips and pistachios.
07 - Drop 1.5-2 tablespoon portions onto prepared sheets.
08 - Bake 10-12 minutes until edges are light brown.
