Pina Colada Berry Cupcakes (Print Version)

# Ingredients:

01 - 1/2 cup butter, softened.
02 - 1/4 cup granulated sugar.
03 - 3/4 cup brown sugar.
04 - 2 large eggs.
05 - 1/3 cup pineapple juice.
06 - 1/3 cup coconut milk.
07 - 1 1/2 teaspoons coconut extract.
08 - 1 1/2 cups all-purpose flour.
09 - 1 1/2 teaspoons baking soda.
10 - 1/2 teaspoon salt.
11 - 20 oz crushed pineapple.
12 - 2 tablespoons brown sugar.
13 - 1 tablespoon cornstarch.
14 - 1/2 teaspoon rum extract.
15 - 1 cup butter for frosting.
16 - 4-4.5 cups powdered sugar.
17 - 1 cup fresh blackberries.
18 - 2-3 tablespoons blackberry jelly.
19 - 1 teaspoon lemon juice.
20 - Coconut flakes for garnish.

# Instructions:

01 - Process coconut flakes into small pieces.
02 - Blend and cook pineapple mixture until thickened.
03 - Puree and strain blackberries for frosting.
04 - Cream butter and sugars, add wet ingredients, then dry.
05 - Fill cups and bake at 375°F for 14-15 minutes.
06 - Beat butter with sugar and blackberry mixture.
07 - Cut centers, add pineapple filling.
08 - Pipe frosting, top with coconut and berries.
