Peanut Butter Sandwich Cookies (Print Version)

# Ingredients:

01 - ½ cup soft butter.
02 - ½ cup sugar.
03 - ½ cup brown sugar.
04 - 1 egg.
05 - ½ cup peanut butter.
06 - 1 teaspoon vanilla.
07 - 1¼ cups flour.
08 - ½ teaspoon baking soda.
09 - ¼ teaspoon salt.
10 - ½ cup peanut butter for filling.
11 - ¼ cup soft butter for filling.
12 - 1 cup powdered sugar.
13 - 1-2 spoons milk.

# Instructions:

01 - Heat oven to 350°F. Line baking sheets.
02 - Cream butter, sugars and peanut butter. Add egg and vanilla. Mix in dry ingredients.
03 - Roll into balls, flatten with fork, and bake 8-10 minutes. Cool completely.
04 - Beat peanut butter and butter. Add sugar and enough milk for spreading consistency.
05 - Spread filling on one cookie and top with another to make sandwiches.

01 - Can add chocolate chips.
02 - Keeps 3 days at room temp.
03 - Keeps 1 week in fridge.
