Peanut Butter Fudge Cookies (Print Version)

# Ingredients:

01 - 1/4 cup softened butter.
02 - 1/4 cup Crisco shortening.
03 - 1/2 cup smooth peanut butter.
04 - 1/2 cup white sugar.
05 - 1/2 cup packed light brown sugar.
06 - 2 large eggs.
07 - 1/2 teaspoon vanilla extract.
08 - 1 1/2 cups all-purpose flour.
09 - 1 teaspoon baking soda.
10 - 1/4 teaspoon salt.
11 - 1/4 cup sugar for coating.
12 - 1/4 cup butter for frosting.
13 - 1 1/2 tablespoons cocoa powder.
14 - 3 tablespoons milk.
15 - 2 cups powdered sugar.
16 - 1 teaspoon vanilla for frosting.

# Instructions:

01 - Beat butter, shortening, peanut butter, and both sugars until light and fluffy (about 2 minutes). Mix in eggs one at a time, then stir in vanilla.
02 - Mix flour, baking soda, and salt in a separate bowl. Combine with wet ingredients until just mixed - avoid overmixing.
03 - Heat oven to 375°F. Roll dough into 1/2 inch balls, coat in sugar, and place on ungreased baking sheet. Bake 6-8 minutes until set but not brown.
04 - Let cookies rest on baking sheet for 2-3 minutes, then move to cooling rack.
05 - Heat butter, cocoa, and milk until boiling. Remove from heat, add powdered sugar and vanilla, beat until smooth.
06 - Spread or pipe frosting between two cookies to make sandwiches.

# Notes:

01 - Don't overbake the cookies or they'll become too hard for sandwiches.
02 - Use frosting while warm for easier spreading.
