Peach Cobbler (Print Version)

# Ingredients:

01 - 2 pounds ripe peaches, cubed.
02 - 1/2 cup sugar for filling.
03 - 2 tablespoons lemon juice.
04 - 2 tablespoons bourbon (optional).
05 - 3/4 teaspoon cornstarch.
06 - Pinch salt.
07 - Pinch nutmeg (optional).
08 - 2 drops almond extract (optional).
09 - 1 cup all-purpose flour.
10 - 1/2 cup sugar, divided.
11 - 1 1/4 teaspoons baking powder.
12 - 3/4 teaspoon salt.
13 - 6 tablespoons cold butter.
14 - 1/2 cup whole milk.

# Instructions:

01 - Preheat to 400°F with rack in middle.
02 - Toss peaches with sugar, lemon, bourbon and seasonings in baking dish.
03 - Cook filling 10 minutes while making topping.
04 - Mix dry ingredients, cut in butter, stir in milk until just combined.
05 - Drop biscuit dough over fruit, brush with sugar syrup, bake 40 minutes total.
06 - Let cool 30 minutes before serving with ice cream.

01 - Peeling peaches optional.
02 - Can skip bourbon and spices.
03 - Serves warm or room temp.
