Peanut Butter and Jelly Cheesecake Bars (Print Version)

# Ingredients:

01 - 6 tablespoons unsalted butter, melted.
02 - 1 3/4 cups graham cracker crumbs.
03 - 1/4 cup roasted peanuts, finely crushed.
04 - 1/3 cup brown sugar.
05 - 1 teaspoon kosher salt, divided.
06 - 2 pounds cream cheese, softened.
07 - 1 cup creamy peanut butter.
08 - 1 cup sugar.
09 - 4 large eggs.
10 - 1 teaspoon vanilla extract.
11 - 1 cup Concord grape jelly.

# Instructions:

01 - Mix crumbs, peanuts, brown sugar, salt, and butter. Press into pan. Bake at 350°F for 12-15 minutes.
02 - Beat cream cheese and peanut butter 5 minutes until smooth. Add sugar, salt, then eggs and vanilla.
03 - Pour into cooled crust. Bake at 325°F for 40-45 minutes until edges set but center wobbly.
04 - Melt jelly until smooth. Cool slightly, pour over cooled cheesecake.
05 - Refrigerate 2 hours until jelly sets. Cut into bars, wiping knife between cuts.

03 - Cool completely between layers.
