Broccoli Cheddar Soup (Print Version)

# Ingredients:

→ Base

01 - 1/4 cup unsalted butter
02 - 1/2 cup diced onions
03 - 1 cup shredded carrots
04 - 2 1/2-3 cups broccoli florets, chopped
05 - 2 cups shredded cheddar cheese

→ Liquids

06 - 1 1/2 cups chicken broth
07 - 1 cup milk
08 - 1 cup heavy whipping cream

→ Seasonings

09 - 1/4 cup all-purpose flour
10 - 1 1/2 teaspoons kosher salt
11 - 1/2 teaspoon black pepper
12 - Pinch of crushed red pepper flakes

# Instructions:

01 - Melt butter, cook onions, carrots and broccoli until softened, about 5 minutes.
02 - Stir in broth, milk and cream. Add flour and seasonings. Cook until thickened, 10-15 minutes.
03 - Add cheese and stir until melted and smooth. Serve hot.

02 - Can be doubled easily
03 - Freezes well up to 3 months
