Overnight Croissant Breakfast Casserole (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - 1 small onion, diced.
03 - 1 pound breakfast sausage, mild.
04 - 4 large croissants (or 8 small), torn into pieces.
05 - 1 cup shredded cheddar cheese.
06 - 6 large eggs.
07 - 1/2 cup heavy whipping cream.
08 - 3 cups whole milk, divided.
09 - 1/2 teaspoon dry mustard powder.
10 - 1/2 teaspoon salt.
11 - 1/2 teaspoon black pepper.
12 - 1/4 teaspoon paprika.
13 - 1/4 teaspoon garlic powder.
14 - 2 tablespoons butter.
15 - 3 tablespoons all-purpose flour.

# Instructions:

01 - Sauté onions in oil until soft. Add sausage and cook until brown. Save drippings for gravy.
02 - Mix sausage, onions, torn croissants, and cheese in greased 9x13 dish.
03 - Whisk eggs, cream, 1/2 cup milk, and seasonings. Pour over croissant mixture.
04 - Cover and refrigerate 8 hours or overnight.
05 - Remove from fridge, bake at 350°F for 35-45 minutes until golden.
06 - Cook flour with butter and reserved fat. Gradually whisk in remaining milk until thickened.
