Mini Cherry Cheesecakes (Print Version)

# Ingredients:

01 - 10 Oreos, crushed to crumbs.
02 - 2 spoons melted butter.
03 - 1 package cream cheese, soft.
04 - 2 spoons heavy cream.
05 - 1 large egg.
06 - ¼ cup white sugar.
07 - 2 teaspoons vanilla.
08 - 1 cup cherry pie filling.

# Instructions:

01 - Heat oven to 325°F. Mix crushed Oreos with melted butter. Press a spoonful into each mini cheesecake cup.
02 - Beat soft cream cheese until smooth. Mix in heavy cream, then egg, sugar and vanilla until creamy.
03 - Pour filling into crusts, filling each about ¾ full. Bake 25 minutes until centers are set.
04 - Let cool completely. Top with cherry filling. Chill at least 1 hour before serving.

01 - Let ingredients come to room temperature first.
02 - Keeps in fridge for 3 days.
03 - Can freeze without topping for 1 month.
04 - Try other toppings like blueberry or chocolate.
