# Ingredients:

01 - Leftover mashed potatoes
02 - All-purpose flour

→ Dairy

03 - Shredded cheese of choice
04 - Grated Parmesan cheese
05 - Sour cream
06 - Beaten eggs

→ Seasonings

07 - Fresh chives
08 - Salt

# Instructions:

01 - Heat oven to 400°F. Grease muffin tin
02 - Beat eggs with sour cream until combined
03 - Mix in cheeses, chives, and salt
04 - Fold in mashed potatoes until even
05 - Fill muffin cups, bake 20-25 minutes until golden
