Kielbasa Gnocchi Soup (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - 13.9 ounces kielbasa, sliced.
03 - 1 small yellow onion, diced.
04 - 1/2 cup sun-dried tomatoes, chopped.
05 - 2 tablespoons minced garlic.
06 - 3 cups chicken broth.
07 - 2 cups water.
08 - 1 cup heavy cream.
09 - 8 ounces cream cheese, softened.
10 - 1 tablespoon Cajun seasoning.
11 - 1/2 teaspoon black pepper.
12 - 1/2 teaspoon red pepper flakes.
13 - 16 ounces potato gnocchi.
14 - 1 cup fresh spinach.
15 - Parsley for garnish.
16 - Parmesan cheese for garnish.

# Instructions:

01 - Heat oil in pot and cook sliced kielbasa until crispy, about 3-5 minutes per side.
02 - Add onions and sun-dried tomatoes, cook 3-5 minutes. Add garlic and cook 1 minute more.
03 - Add broth, water, cream, cream cheese and all seasonings. Stir until cream cheese melts and mixture is smooth.
04 - Add gnocchi to soup and cook until they float to surface, about 2-3 minutes.
05 - Stir in spinach until wilted. Top with parsley and parmesan.

# Notes:

01 - Soup will thicken as it stands.
02 - Gnocchi is done when floating.
