Creamed Spinach (Print Version)

# Ingredients:

01 - 15 ounces frozen cut leaf spinach, drained well.
02 - 2 tablespoons unsalted butter.
03 - 1/4 cup shallots, finely diced.
04 - 1 tablespoon garlic, minced.
05 - 2 tablespoons all-purpose flour.
06 - 1 1/4 cups heavy cream.
07 - 1/2 teaspoon salt.
08 - 1/4 teaspoon black pepper.
09 - 1/8 teaspoon ground nutmeg.
10 - 1 cup parmesan cheese, freshly grated.

# Instructions:

01 - Drain thawed spinach in a strainer over a bowl. Press gently with a spoon to remove all excess water.
02 - Melt butter in a 10-inch skillet over medium-high heat. Add shallots and garlic, cook until soft and fragrant.
03 - Stir in flour and cook until light golden, about 30 seconds.
04 - Pour in cream slowly while stirring. Add salt, pepper, and nutmeg. Cook until bubbly and thick, stirring often.
05 - Mix in drained spinach and parmesan cheese until well combined. Remove from heat and serve.

# Notes:

01 - Fresh spinach can replace frozen - use 1.5 pounds fresh to equal 15 ounces frozen.
02 - Sweet onion works instead of shallots.
03 - Pecorino-romano cheese is a good parmesan substitute.
