Homemade Beef Lo Mein (Print Version)

# Ingredients:

01 - 12 ounces sliced flank steak.
02 - 1 teaspoon cornstarch for marinade.
03 - 1 teaspoon soy sauce for marinade.
04 - 1 teaspoon oil for marinade.
05 - 1/4 teaspoon baking soda.
06 - 1 tablespoon light soy sauce.
07 - 1 tablespoon oyster sauce.
08 - 2 teaspoons dark soy sauce.
09 - 1/2 teaspoon sesame oil.
10 - 1/2 teaspoon salt.
11 - 1/4 teaspoon sugar.
12 - 1/4 teaspoon white pepper.
13 - 1 pound fresh lo mein noodles.
14 - 1 minced garlic clove.
15 - 1 julienned carrot.
16 - 1/2 julienned red bell pepper.
17 - 1/2 cup sliced mushrooms.
18 - 1/2 cup bamboo shoots.
19 - 2 cups shredded napa cabbage.
20 - 2/3 cup snow peas.
21 - 2 cups bean sprouts.
22 - Two tablespoons vegetable oil.
23 - 1 tablespoon Shaoxing wine.
24 - 2 sliced scallions.

# Instructions:

01 - Cut flank steak against the grain into thin strips. Mix with baking soda, cornstarch, soy sauce, and oil. Let sit for 30 minutes.
02 - Combine light soy sauce, oyster sauce, dark soy sauce, sesame oil, salt, sugar, and white pepper in a bowl.
03 - Rinse cooked lo mein noodles under hot water and drain well. If using uncooked noodles, cook until just tender, then drain.
04 - Heat wok until smoking. Add oil and sear beef strips for 30 seconds each side. Remove and set aside.
05 - Stir-fry garlic, carrots, peppers, and mushrooms for 30 seconds. Add bamboo shoots and white scallions for 20 seconds. Add cabbage and stir-fry another 30 seconds.
06 - Add noodles and wine. Toss well. Pour in sauce mixture. Add snow peas, sprouts, and beef. Mix until hot. Stir in green scallions and serve.
