Ham and Corn Chowder (Print Version)

# Ingredients:

01 - 4 bacon strips, cut up.
02 - ½ onion, chopped.
03 - 2 celery stalks, chopped.
04 - ¼ cup flour.
05 - 2 garlic cloves, minced.
06 - 4 cups chicken broth.
07 - 1 cup heavy cream.
08 - 2 cups frozen corn.
09 - 1 pound chopped smoked ham.
10 - 2 russet potatoes, peeled and diced.
11 - ¼ teaspoon Italian seasoning.
12 - Pinch of cayenne pepper.
13 - Salt and pepper to taste.

# Instructions:

01 - Fry bacon pieces until crispy in a large pot. Take out bacon but keep the fat.
02 - Cook onion and celery in the bacon fat for 5 minutes.
03 - Stir in flour and garlic for 1 minute. Add broth and scrape up any brown bits.
04 - Put in cream, corn, ham, potatoes, seasonings and most of the bacon. Save some bacon for topping.
05 - Bring to boil then cook gently 15-20 minutes with lid cracked until potatoes are soft.
06 - Add salt and pepper. Top bowls with saved bacon.

# Notes:

01 - Use low-salt broth if needed.
02 - Gets thicker as it cooks.
03 - Stir now and then while cooking.
