Grilled Shishito Peppers (Print Version)

# Ingredients:

01 - 2 pounds shishito peppers.
02 - 2 tablespoons olive oil.
03 - 1 teaspoon flaked salt.
04 - 1 fresh lemon.
05 - 3 tablespoons crumbled cotija cheese.

# Instructions:

01 - Preheat grill to highest heat setting.
02 - Coat peppers evenly with olive oil.
03 - Grill covered for 3-4 minutes.
04 - Turn peppers and grill 2-3 minutes more until blistered.
05 - Top with salt, fresh lemon juice and cotija cheese.

01 - Best served hot.
02 - Some peppers may be spicy.
