2 pounds shishito peppers.

2 tablespoons olive oil.

1 teaspoon flaked salt.

1 fresh lemon.

3 tablespoons crumbled cotija cheese.
# Instructions:

Preheat grill to highest heat setting.

Coat peppers evenly with olive oil.
03 -
Grill covered for 3-4 minutes.
04 -
Turn peppers and grill 2-3 minutes more until blistered.
05 -
Top with salt, fresh lemon juice and cotija cheese.
