Grape Soda Cupcakes (Print Version)

# Ingredients:

01 - 4 egg whites at room temperature.
02 - 1/2 cup regular vegetable oil.
03 - 1 1/2 cups grape soda.
04 - 1 box (15.25 oz) white cake mix.
05 - 1 packet (0.14 oz) unsweetened grape drink powder.
06 - 4-6 drops purple food coloring gel.
07 - 1 cup (2 sticks) salted butter, softened.
08 - 2 teaspoons pure vanilla extract.
09 - 1/4 teaspoon pure almond extract.
10 - 4 cups powdered sugar, sifted well.
11 - 2-3 tablespoons heavy whipping cream.
12 - Purple sparkle sugar for topping (optional).

# Instructions:

01 - Heat oven to 350°F. Put paper liners in 24 regular muffin cups.
02 - Beat egg whites, oil and grape soda in a bowl until mixed well.
03 - Mix in cake mix and grape powder on low speed just until smooth. Add food coloring if you want darker purple color.
04 - Fill each liner 2/3 full. Bake 12-15 minutes until done. Cool completely on wire rack.
05 - Beat soft butter with vanilla and almond extract until fluffy, about 1-2 minutes.
06 - Mix in powdered sugar one cup at a time, adding cream between cups. Beat until smooth. Add purple coloring.
07 - Pipe frosting onto cooled cupcakes in spirals. Top with purple sugar if desired.

# Notes:

01 - Store in fridge up to 4 days or freeze up to 1 month.
02 - Makes great mini cupcakes too - adjust bake time down.
03 - Any brand grape soda works fine.
