Whisk together flours, baking soda and salt.

Cream butter, oil, sugar and stevia. Add egg and vanilla.

Slowly mix flour mixture into wet ingredients. Form into ball and wrap.

Refrigerate dough at least 1 hour or overnight.

Roll between parchment to ¼ inch. Cut shapes. Bake at 350°F for 10-13 minutes.

Melt chocolate with oil and food coloring. Dip cookies and add sprinkles.
