To a large skillet, add olive oil, pounded chicken, evenly season with poultry seasoning, salt, and pepper. Cook over medium-high heat for 5 minutes without moving or disturbing the chicken to achieve a golden sear.

Flip chicken over and cook for another 5 minutes or until fully cooked through, depending on thickness. Avoid disturbing the chicken while it sears.

Remove the chicken with a slotted spatula and transfer it to a plate to rest.

Using caution, deglaze the skillet by adding white wine or chicken broth. Allow it to bubble and release any browned bits for a few seconds.

Add butter to the skillet and stir continuously until melted, about 1 minute. Then, add garlic and cook while stirring until fragrant, approximately 1 minute.

Turn off the heat, return chicken to the skillet, and flip it in the garlic butter sauce. Spoon the sauce over the chicken.
