Quick Hearty Hamburger Stew (Print Version)

# Ingredients:

→ Base

01 - 1 pound lean ground beef
02 - 1 tablespoon olive oil
03 - 3 tablespoons flour

→ Fresh Vegetables

04 - 1 medium onion, chopped
05 - 3 celery sticks, chopped
06 - 4 cloves garlic, minced
07 - 2 Russet potatoes, peeled and diced
08 - 4 medium carrots, peeled and sliced
09 - 1 cup frozen peas

→ Sauce & Seasonings

10 - 1 can (6 ounces) tomato paste
11 - 4 cups beef broth, plus extra if needed
12 - 1 tablespoon Worcestershire sauce
13 - 1/2 teaspoon Italian seasoning
14 - Salt and pepper to taste

# Instructions:

01 - Heat the oil in a soup pot and toss in your onion and celery. Let them cook over medium-high heat until they start to soften, about 5-7 minutes.
02 - Drop in the minced garlic and give it a quick stir for about 30 seconds, just until you can smell it.
03 - Add your ground beef to the pot. Break it up with your spoon while it cooks until it's nicely browned, about 8 minutes.
04 - Sprinkle the flour over everything and stir for a couple minutes - this will help thicken your stew. Then stir in the tomato paste until well mixed.
05 - Pour in the broth, Worcestershire sauce, and Italian seasoning. Add your potatoes and carrots. Bring it all to a boil, then lower to a good simmer. Cover the pot (leave a little gap), and let it cook for at least 30 minutes, stirring now and then.
06 - Once the vegetables are tender, stir in the peas and season with salt and pepper until it tastes just right. If it's too thick, add a splash more broth. Want it thicker? Cook a bit longer with the lid off.
