Easy Frito Pie (Print Version)

# Ingredients:

01 - 1 pound lean ground beef.
02 - 1 small onion, diced.
03 - 1 packet taco seasoning mix.
04 - 2/3 cup water.
05 - 1 can (10 oz) enchilada sauce.
06 - 1 can (15 oz) pinto beans, drained and rinsed.
07 - 1 bag (9.25 oz) Fritos corn chips.
08 - 2 cups shredded Mexican cheese blend.
09 - 1 green onion, chopped.
10 - Sour cream for topping.
11 - Guacamole for topping.

# Instructions:

01 - Heat oven to 350°F. Spray a 9x13 glass baking dish with cooking spray.
02 - Brown ground beef with diced onions in a large skillet. Drain fat when done.
03 - Add taco seasoning and water to beef. Simmer 3-4 minutes, stirring often.
04 - Stir in enchilada sauce and pinto beans until well mixed.
05 - Put 4 cups Fritos in baking dish, top with 1 cup cheese. Spread meat mixture over top. Add remaining cheese.
06 - Bake 18-20 minutes until hot and bubbly. Top with remaining Fritos.

# Notes:

01 - Let cool slightly before serving.
02 - Add toppings like green onions, sour cream and guacamole.
03 - Save some Fritos for the top after baking to keep them crunchy.
