Doritos Chicken Casserole (Print Version)

# Ingredients:

01 - 1 bag (9.75 oz) Nacho Cheese Doritos, lightly crushed.
02 - 3 cups cooked chicken, shredded or chopped.
03 - 1 can (15 oz) black beans, drained and rinsed.
04 - 1 can (10.5 oz) cream of chicken soup.
05 - 1 cup sour cream.
06 - 1 cup salsa.
07 - 1 cup frozen corn.
08 - 2 cups shredded cheddar cheese, divided.
09 - 1 teaspoon chili powder.
10 - 1/2 teaspoon cumin.
11 - 1/2 teaspoon garlic powder.
12 - Salt and pepper to taste.
13 - Fresh cilantro for garnish.
14 - Green onions for garnish.

# Instructions:

01 - Heat oven to 350°F. Spray 9x13 baking pan. Crush Doritos slightly, leaving some texture.
02 - Combine chicken, beans, soup, sour cream, salsa, corn, 1 cup cheese, and seasonings. Taste and adjust salt.
03 - Spread half the crushed Doritos in pan. Top with chicken mixture.
04 - Cover with remaining Doritos and cheese. Bake 25-30 minutes until bubbly and cheese melts.
05 - Let rest 3-5 minutes. Garnish with cilantro and green onions if desired.

# Notes:

01 - Can be assembled 24 hours ahead.
02 - Rotisserie chicken works well.
03 - Any melting cheese can be used.
