Quick Tuscan Style Ravioli (Print Version)

# Ingredients:

→ Base

01 - 1 tablespoon olive oil
02 - 1 tablespoon butter
03 - 3 cloves garlic, minced
04 - 1 pound refrigerated cheese ravioli

→ Sauce

05 - 1/2 cup chicken or vegetable broth
06 - 1 cup heavy cream
07 - 1 teaspoon lemon juice
08 - 1/4 cup sun-dried tomatoes
09 - 1 cup fresh baby spinach
10 - Fresh basil to taste (optional)
11 - Salt and pepper to taste
12 - Freshly grated parmesan to taste

# Instructions:

01 - Cook garlic in oil and butter for 30 seconds.
02 - Add broth, cream, lemon juice, tomatoes, and ravioli. Cover and cook 5 minutes.
03 - Stir in spinach and basil. Cover until wilted.
04 - Season with salt and pepper. Top with parmesan if desired.

# Notes:

01 - No need to pre-boil ravioli
02 - Use oil-packed sun-dried tomatoes
03 - Sauce will thicken as it cooks
