Creamy Italian Sausage Orzo Soup (Print Version)

# Ingredients:

01 - 16 ounces Italian sausage.
02 - 1/2 medium onion, finely chopped.
03 - 2 celery sticks, finely chopped.
04 - 2 tablespoons flour.
05 - 4 cloves garlic, minced.
06 - 4 cups chicken broth.
07 - 1 can (28 oz) diced tomatoes with juices.
08 - 1/2 teaspoon dried oregano.
09 - 1 cup uncooked orzo.
10 - 1 cup heavy cream.
11 - 2 cups fresh baby spinach, packed.
12 - Salt and pepper to taste.

# Instructions:

01 - Brown sausage in large pot 7-10 minutes. Remove to plate, leave 1 tablespoon fat.
02 - Sauté onion and celery 4-5 minutes. Add flour and garlic, cook 1 minute more.
03 - Add broth slowly, stirring to dissolve flour. Add tomatoes, oregano, and sausage. Bring to boil.
04 - Add cream and orzo. Simmer 12 minutes until tender, stirring often.
05 - Add spinach, season with salt and pepper.

# Notes:

01 - Cook orzo separately for leftovers.
02 - Use full-fat cream to prevent curdling.
03 - Stir frequently while cooking orzo.
