Cranberry Orange Snowballs (Print Version)

# Ingredients:

01 - 1 cup shortening.
02 - 2 cups powdered sugar, divided.
03 - 2 cups all-purpose flour.
04 - 2 teaspoons vanilla.
05 - Zest of 2 oranges.
06 - 1 cup dried cranberries, finely chopped.

# Instructions:

01 - In a large mixing bowl, beat shortening, 1/2 cup powdered sugar, flour, vanilla, 1/2 the orange zest, and cranberries, until mixture is well-combined.
02 - Shape into scant 1-inch balls.
03 - Place balls two inches apart on parchment paper or silicone mat-lined cookie sheets.
04 - Bake at 325 degrees for 20-22 minutes, or until they appear set.
05 - In a medium bowl, whisk together remaining orange zest and remaining powdered sugar.
06 - Immediately from the oven, carefully roll the cookies in powdered sugar using two forks to handle the hot, fragile cookies.
07 - Move to wire racks to cool completely.

# Notes:

01 - Use forks to roll hot cookies in sugar and let them sit for a minute to help sugar stick better.
02 - Arrange powdered sugar in a deep dish pie plate for easier coating.
03 - Can coat 5-6 cookies at once in the sugar mixture.
