Three Cheese Lasagna (Print Version)

# Ingredients:

→ Meat Sauce

01 - 1 pound ground beef (15-20% fat)
02 - 1 medium onion, finely diced
03 - 2 large garlic cloves, minced
04 - 1/4 cup dry red wine or beef broth
05 - 1 tablespoon olive oil
06 - 24 oz marinara sauce
07 - 1/2 teaspoon sea salt
08 - 1/4 teaspoon black pepper
09 - 1/4 teaspoon dried thyme
10 - 1/2 teaspoon sugar
11 - 2 tablespoons parsley, chopped

→ Cheese Layer

12 - 16 oz low-fat cottage cheese
13 - 15 oz reduced fat ricotta cheese
14 - 1 large egg
15 - 2 tablespoons parsley, chopped
16 - 4 cups mozzarella cheese, divided

→ Pasta

17 - 9 lasagna noodles

# Instructions:

01 - Cook beef and onion in oil until browned. Add garlic, wine, marinara, and seasonings. Simmer 5 minutes.
02 - Combine cottage cheese, ricotta, 1 cup mozzarella, egg, and parsley.
03 - Cook noodles al dente, drain and cool in cold water.
04 - Layer sauce, noodles, and cheeses. Cover with foil and bake at 375°F for 45 minutes. Broil until golden.

# Notes:

01 - Let rest 30 minutes before cutting
02 - Use toothpicks to keep foil from sticking
03 - Can make ahead and refrigerate
