Classic Stovetop Chili (Print Version)

# Ingredients:

01 - 2 tablespoons extra virgin olive oil.
02 - 1 large yellow onion, diced.
03 - 3 celery stalks, thinly sliced.
04 - 2 medium carrots, diced.
05 - 4 cloves garlic, minced.
06 - 2 pounds ground beef.
07 - 2 tablespoons chili powder.
08 - 2 teaspoons paprika.
09 - 1 teaspoon ground cumin.
10 - 1 teaspoon dried oregano.
11 - 1 teaspoon sea salt.
12 - 1/2 teaspoon ground cinnamon.
13 - 28 ounces canned diced tomatoes.
14 - 15 ounces canned kidney beans, drained and rinsed.
15 - 1 cup broth.

# Instructions:

01 - Heat oil in large pot over medium heat. Sauté onions, celery, and carrots for 4-5 minutes until tender. Add garlic and cook 1 minute more.
02 - Add ground beef, break up and cook until mostly browned, 6-7 minutes. Add all spices and cook 2-3 minutes more.
03 - Stir in tomatoes, beans, and broth. Bring to simmer, reduce heat to medium-low.
04 - Cook uncovered 30-45 minutes, stirring occasionally, until thickened. Serve warm with optional toppings.

# Notes:

01 - Can adjust spice level by varying chili powder amount.
02 - Beans are optional.
03 - Can simmer longer (1.5-2 hours) for enhanced flavor.
