Snowball Cookies (Print Version)

# Ingredients:

01 - 1 cup unsalted butter, softened.
02 - 5 tablespoons granulated sugar.
03 - 2 teaspoons pure vanilla extract.
04 - 1/4 teaspoon fine-grain sea salt.
05 - 2 cups all-purpose flour.
06 - 2 cups finely chopped walnuts, almonds or pecans.
07 - 1 1/2 cups confectioners sugar.

# Instructions:

01 - Beat butter and sugar until smooth.
02 - Mix in vanilla and salt.
03 - Gradually add flour, beating after each addition.
04 - Stir in chopped nuts.
05 - Divide dough in half.
06 - Refrigerate wrapped in plastic for 45 minutes.
07 - Heat oven to 350°F.
08 - Line baking sheets with parchment.
09 - Roll dough into 1-inch balls.
10 - Place balls 1 1/2 inches apart on sheets.
11 - Bake 12-14 minutes until edges brown slightly.
12 - Cool on sheets for 2 minutes.
13 - Dust warm cookies with powdered sugar.
14 - Cool completely.
15 - Dust second time with powdered sugar.

# Notes:

01 - Don't overbake - cookies should just start browning at edges.
02 - Double coating of sugar creates classic snowy appearance.
